One ingredient: onion. Most supermarket onion powder is padded out with anti-caking agents so it pours freely for years on a shelf. Ours is simply Sri Lankan onions β peeled, sliced, low-temperature dried and milled to a fine powder. It clumps a little in humid weather, because real onion powder does. It also delivers the deep, sweet-savoury hit that additives dilute.

Why pure powder clumps (and why that's good)
Onion powder is naturally hygroscopic β real powder pulls moisture from the air and forms soft lumps. Commercial brands hide this with silica and anti-caking agents; we handle it with a tight lid. Keep it airtight, break any lumps with a dry spoon, and taste the savoury depth additives were watering down. If it never clumps in humidity, ask what else is in the jar.

FAQ
Onion powder vs granulated onion β what's the difference?
Grind size only. Powder is finer, dissolves instantly and blends invisibly into sauces and rubs; granulated onion is coarser and gives a little texture β better for crusts and dry brines. For everyday cooking, powder is the more versatile of the two.
How much powder replaces a fresh onion?
About 1 tablespoon of powder per medium onion, or roughly 1 teaspoon per ΒΌ cup of chopped onion. It's concentrated and savoury, so season, taste, then add more.
My powder clumped β is it spoiled?
No β clumping is exactly what additive-free onion powder does in humid air. Break it up with a dry spoon and store airtight. Spoiled powder smells stale or loses its punch; clumpy-but-pungent is perfectly good.
Can I use onion and garlic powder together?
Absolutely β they're the classic savoury duo. A common starting ratio is 2 parts onion powder to 1 part garlic powder as the base of a house seasoning; adjust to taste from there.
