How to use cumin seeds
- Curry powders: the essential earthy note β dry-roast with coriander and fennel, then grind. The classic Sri Lankan trio.
- Tempering / tadka: bloom Β½ tsp in hot oil with mustard seeds and curry leaves before dhal, vegetables or rice.
- Rice dishes: a teaspoon toasted into the pot lifts plain rice, pilau and biryani.
- Rubs & marinades: toasted, coarsely ground cumin is the base of taco seasoning, shawarma rubs and grilled-meat marinades worldwide.
- Yoghurt & raita: a pinch of toasted ground cumin over yoghurt, raita or hummus is the finishing move.
Toast first β thirty seconds changes everything
Raw cumin is dusty and shy; toasted cumin is warm, nutty and aromatic. Heat a dry pan, add the seeds, and shake for 30β45 seconds until they darken a shade and smell rich. Toast whole, cool, then grind or use as-is. Once ground, cumin fades within weeks β whole seeds keep their character for a year or more, which is why serious kitchens buy whole.
Cumin vs black cumin β not the same spice
Worth knowing before you buy: this is true cumin (Cuminum cyminum) β the familiar earthy, smoky seed of curry powders and taco seasoning. Black cumin seeds are a different plant with a different flavor, used differently. In Sri Lankan cooking, white cumin is suduru and black cumin is kaluduru β recipes name them separately, and they're not interchangeable.

FAQ
Whole cumin seeds or ground cumin β which should I buy?
Whole, almost always. Cumin's aromatic oils fade fast after grinding β whole seeds stay potent for a year and grind in seconds after toasting. Buy ground only if you'll finish it within a few weeks.
How much cumin replaces a teaspoon of ground?
Use a level teaspoon of whole seeds per teaspoon of ground β toasted and freshly ground, it'll actually taste stronger than stale pre-ground, so adjust down slightly if a recipe was written for old powder.
Are cumin and black cumin the same?
No β different plants, different flavors. This is true cumin (Cuminum cyminum, suduru), the curry-powder staple. Black cumin (kaluduru) is a separate spice we sell here. Recipes that name one shouldn't be made with the other.
What's a good cumin substitute?
Nothing matches it exactly. Ground coriander plus a pinch of chili gets partway there; caraway is the closest botanical cousin but noticeably sharper. For curry blends, it's worth just having cumin.
Why did my cumin taste bitter?
Almost always over-toasting β past the fragrant stage, cumin's oils scorch and turn acrid. Thirty to forty-five seconds in a hot dry pan, moving constantly, then straight out of the pan to cool.
