Whole, plump and green-gold, these seeds are for toasting, tempering, steeping and grinding โ the difference between a curry blend that's flat and one that hums.
How to use them
- Curry powders: the essential sweet note โ dry-roast with coriander and cumin, then grind. (Our roasted Ceylon curry powder recipe calls for exactly 1 tsp.)
- Tempering / tadka: bloom a pinch in hot oil with mustard seeds and curry leaves before dhal or vegetables.
- Fennel seed tea: lightly crush 1 tsp, steep 5 minutes in hot water โ a naturally caffeine-free, softly sweet cup.
- Breads & bakes: whole seeds in flatbreads, crackers and biscotti; classic with sausage and pork too.
- The after-meal tradition: across South Asia a pinch of fennel is chewed after meals as a breath freshener โ the original mukhwas, no candy coating required.
- Tomato sauces & seafood: a half-teaspoon, toasted and crushed, is the quiet secret in Italian-style sauces and fish spice rubs.
Toast first โ it's a different spice
Raw fennel is pleasant; toasted fennel is perfume. Thirty seconds in a dry, hot pan โ until the seeds turn fragrant and a shade darker โ wakes the essential oils and turns the sweetness nutty. Toast whole, cool, then grind or use as-is. Once ground, use within a few weeks; whole seeds keep their character for a year or more.

FAQ
Are fennel seeds the same as anise seeds?
No โ different plants with a shared flavor compound (anethole), which is why they smell related. Fennel is larger, greener, sweeter and milder; anise is smaller and sharper. In most cooking, fennel substitutes for anise gracefully; the reverse can overpower.
Whole seeds or ground โ which should I buy?
Whole, almost always. Fennel's oils fade fast after grinding โ whole seeds keep their aroma for a year and grind in seconds. Buy ground only if you'll finish it within a few weeks.
What do fennel seeds taste like?
Sweet and softly licorice-like, with a warm, grassy roundness โ closer to a gentle herbal sweetness than to candy licorice. Toasting deepens it into something nutty and perfumed.
How do I make fennel seed tea?
Lightly crush a teaspoon of seeds (a rolling pin over a bag works), steep 5 minutes in a cup of hot water, and strain. Naturally caffeine-free; lovely with a slice of ginger or after dinner.
