In nearly every Sri Lankan and South Indian kitchen, cooking begins the same way: hot oil, then black mustard seeds โ€” aba in Sinhala, kaduku in Tamil โ€” waiting for the pop. That crackle is the sound of a dish starting. Black mustard (Brassica nigra) is the most pungent of the mustards, and it's the non-negotiable base note of authentic island cooking.

The tempering technique (tadka / thel dala)

This is what black mustard is for. Heat 2 tbsp of oil (coconut oil is traditional) until shimmering, add 1 tsp of seeds, and cover the pan โ€” they pop and jump. When the popping slows, add curry leaves and dried chilli (they'll sizzle), then your onion, garlic and the rest of the dish. The seeds turn from raw and nutty to deep, toasty and complex. This 30-second step is the flavor foundation under almost every Sri Lankan curry, sambol and mallung.

Classic Sri Lankan tempering โ€” dhal (parippu)

  • 2 tbsp coconut oil ยท 1 tsp black mustard seeds ยท 10โ€“12 curry leaves ยท 1โ€“2 dried red chillies ยท 1 sliced onion
  • Heat oil, add mustard seeds, cover and wait for the pop.
  • Add curry leaves and chillies, then onion; cook until golden.
  • Stir in 1 cup red lentils, 1 tsp turmeric, 400ml coconut milk and salt; simmer 20 min until soft.

Why do mustard seeds pop in hot oil?

Heat rapidly expands the moisture inside each seed until it bursts โ€” the pop. It also releases the seed's aromatic compounds into the oil, which is what deepens the flavor from raw-nutty to toasty and sharp. A strong pop means fresh, well-stored seeds; a weak pop means they're old.

What's the difference between black, brown and yellow mustard seeds?

Pungency and use. Black is the sharpest โ€” the classic for Sri Lankan and South Indian tempering. Brown is medium-hot and used for Dijon-style mustard. Yellow is the mildest, made for condiments and pickling. For authentic island cooking, reach for black.

Do I need to cover the pan?

Yes โ€” black mustard seeds pop vigorously and will jump out of an open pan. Add them to the hot oil and cover immediately; lift the lid once the popping slows.

How should I store them?

Whole, airtight, cool and dry, away from light. Kept dry they stay potent for 2โ€“3 years โ€” only grind or crush what you'll use soon, since ground mustard fades faster.
