What Bambara Honey Is

Bambara (เถถเถนเถป) is the Sinhala name for the giant rock bee, Apis dorsata โ€” a wild bee that builds large, open combs high in tall forest trees and on cliffs. It can't be kept in a hive, so its honey can only be foraged from the wild by traditional honey hunters, in season, at some risk and in small quantities. That's what makes it rare. What you get is raw, unfiltered, single-origin forest honey โ€” exactly as the bees made it, from the wild flowers of the Sri Lankan forest.
