True Ceylon Cinnamon vs "Cassia"
Most "cinnamon" on the shelf is actually cassia — a cheaper, harsher-tasting bark from a different tree. This tea is made from true Ceylon cinnamon, prized for its delicate, sweet, citrusy warmth. True Ceylon cinnamon is also naturally very low in coumarin (a compound found in much higher levels in cassia) — one of the reasons it's considered the finer cinnamon. - Hot: one bag per cup, freshly boiled water. Steep 5–10 minutes — cinnamon bark releases its flavour more slowly than leaf tea, so give it time.

- Add-ins: lovely with a little honey, a slice of lemon, or a splash of milk.
- Iced: brew strong, cool, and pour over ice.

How do I know this is real Ceylon cinnamon?

What's the difference between Alba and C5 grade?
Grades measure quill thinness — Alba is the thinnest, most delicate grade (the "champagne" of Ceylon cinnamon), C5 a step below and the everyday choice. Same species, same tree; the difference is craft and refinement. See our grades guide.
How much cinnamon can I use per day?
The relevant limit is coumarin, and true Ceylon contains only trace amounts — a typical adult stays far below the European guideline even at a few teaspoons daily, which is not true of cassia. Check your number by body weight with the safe cinnamon calculator, and see how much per day.
What about lead in cinnamon?
A fair question after the US recalls. This batch measured 0.2 ppm — a fifth of New York's 1.0 ppm action level, the strictest US benchmark — with arsenic and mercury not detected. The certificate is published here.

I seemed to relax and sleep well after making tea with 1-2 of these flowers and letting them steep for at least 10 minutes. It took a while for the order to be shipped, and then arrived safely after a week or so more, so roughly, allow 3-4 weeks until receipt. Thanks for the great-quality product! I didn’t really want the purple lotus with it, and would have preferred extra blue water lily, but I appreciate the kindness.

Most flavoured greens are either too sweet or taste artificial — soursop is hard to fake and easy to overdo. This blend gets it right. The Ceylon green tea base is clean and slightly grassy, and the soursop comes through as a delicate creamy-fruity aromatic on top. Beautifully done and genuinely refreshing.

Try it cold. I steep a heaped tablespoon in cold filtered water in the fridge overnight, strain in the morning, serve over ice. Genuinely incredible — smooth, slightly sweet from the soursop, never bitter. My summer drink of choice now.

I've now experimented with this in roughly every way you can brew tea. Hot at 80°C for two minutes — clean, light, soursop subtle on top. Hot at 90°C for five minutes — bigger soursop note, slightly fuller body, never bitter (this blend is unusually forgiving). Cold brew overnight — my favourite, smooth and faintly sweet. Iced with mint and a slice of lime — incredible summer drink. Multiple cooking methods, all give a different lovely result. The leaf clearly has a lot to give. This is now my permanent green tea.
